We love our planet, and so our distillery is built and operated using sustainable processes such as solar-powered stills, biomass-powered steam boilers and circular rainwater systems. We have designed and built our own unique systems which reduce our impact on the environment to almost zero.

We are very proud to say that you can find White Cliffs Gin in every Michelin-starred restaurant in Kent, Shepherd Neame pubs, and over 200 independent pubs, bars and restaurants in the county.

As one of the first sustainable distilleries in the UK, we understand the value of developing reliable business practices and processes, and maintaining great relationships with our clients, producers and employees.

Our Founder

Sebastian is our Founder and head of creation. Raised in Kent and always having enjoyed a good tipple, during his 6 years spent travelling across the globe one thing was clear: everywhere he went, sharing a drink brought people together no matter their culture or nationality.

Upon returning to the UK after his travels, the feeling of 'arriving home' whilst walked along the White Cliffs of Dover was a poignant moment. Sebastian resolved to recreate this feeling, bottled as a celebration of this inspirational homeland - after 2 years of recipe development, White Cliffs Gin was finally created!

With 10 years experience in the wine and spirits industry, Sebastian completed his apprenticeship in wine, followed by his diploma at the Institute of Brewers & Distillers.

Our Site

Our processes are designed as a circular system, reducing our water consumption and waste production by 90%, and our power is produced using 100% renewable sources. We are working towards being carbon-neutral, and are building heritage orchards on-site as part of our carbon offsetting.

Solar panels power our distillery, and our steam is created by biomass, which we produce on site by pelletising waste and windfall wood, dried by capturing waste heat from the distillation process.

Our distillery is part of a big regenerative agriculture and blockchain assured carbon offsetting project called Re-Generation Earth. This aims to offset as much of our carbon emissions as possible. We are engaged in a range of interesting waste management techniques including black soldier fly larvae growth, Vermicomposting and Bokashi fermentation. 

Our Vintage Pot Still

Since our first distillation run in 2022, our vintage pot still and pride and joy - Brunhilde - has helped us to create White Cliffs Gin. Customised specially for us with increased copper contact and vapour basket, she produces some of the smoothest, most flavoursome spirits we have ever tried.

Originally manufactured in the Black Forest in Germany, she had a successful career distilling fruit spirits before giving it all up to join us in Kent. She has been instrumental in the development of our White Cliffs Gin recipe, as the nuance and balance we are able to create in our flavour profile is exceptional.
